Jello Cookie Recipe

Recently I have discovered this incredibly easy recipe on Pintrest and I would love to share it with you.





I'm not gonna lie... I messed up the first time... I wasn't paying full attention to the recipe because my brother was in the room and we were talking therefore I forgot to add the sugar to the butter and cream them together... no wonder I thought it looked kind of funny. I had to throw it out and start all over.

Here's what you'll need;
  • 3 1/2 cups flour
  • 1 tsp baking powder
  • 1 1/2 cups salted butter softened
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 4 (3 oz) pkg jello [you can use any flavors you want]
I used what we had in the cabinet which was Royal Raspberry, Jell-O Raspberry,  Jell-O Lemon, and Jell-O Berry Fusion.
If you love Lemon bars I highly suggest using Lemon, they reminded me so much of lemon bars only sweeter and not so lemony. The Royal Raspberry flavoring, personally, I though left a funny after taste, I didn't try the other two Jell-O flavors, but everyone loved them.
--I've heard people have also used this as play dough for their kids, btw--

First off, in a separate bowl mix together flour and baking powder then set aside. In a different bowl you'll want to beat the butter till it's creamy, then beat in sugar till it's light and fluffy, beat in eggs and vanilla, then gradually add in the flour mixture.
Divide dough into four sections, sprinkle 2tbsp of Jello onto each section, then knead. --I washed my hands between each to avoid cross flavoring-- You could also add a few drops of food coloring to make the color more vibrant. I didn't and I thought they looked fine.

Next, roll them into 1-inch shaped balls and roll in the extra jello then flatten into a cookie shape 


Bake for 8-10 minutes at 350 on a baking sheet cool for a few minutes and move onto a cooling rack.
They're easier to transfer when they're still a bit warm, once they cool off they are harder to transfer because they stick a little to the sheet, it's optional on whether you chose to use wax/parchment paper.


Not too shabby if I do say so myself.
